Churros are special South and Central American doughnut sticks. This sweet treat was adopted from Spain and often called a "Mexican doughnut." Churros are tube-shaped, unyeasted sticks of dough, piped from a star-tipped pastry bag, fried in oil, and rolled in cinnamon sugar. They're delicious and surprisingly easy to make. In South America, churros are a little different. They are typically filled with something rich like dulce de leche, Nutella (hazelnut butter and chocolate), or vanilla pastry cream. If you have made cream puffs before, you will find that churro dough is very similar. Whether you choose to fill them or not, churros are quick to make and a guaranteed crowd pleaser. If you make them yourself, you will enjoy them at their best—freshly cooked, warm, and crispy on the outside.

Ingredients
1/2 cup water
1/2 cup buttermilk
1/2 cup butter
1 pinch salt
1 teaspoon sugar
1 1/4 cups flour
1 teaspoon vanilla
3 large eggs
2 to 3 cups vegetable oil (or amount needed for frying)
1/2 cup sugar
1 teaspoon cinnamon

Optional: dulce de leche, Nutella, or vanilla pastry cream

Steps to Make It

In a pot, combine the water, buttermilk, butter, salt, and 1 tablespoon sugar. Bring the mixture to a boil.
Stir in the flour all at once using a heat-proof spatula. Continue to stir until the mixture clumps together to form a ball. Continue to cook for a minute or two more, turning the dough over in the pot with the spatula. Remove from heat. Add the vanilla. Add the eggs, one at a time, mixing well after each. The mixture should begin to look shiny, but should not slide off the spatula easily and be slightly stiffer than cream puff dough. If the mixture seems too thick and lacks shine, add an extra egg. Place dough in a pastry bag fitted with a star tip that has an opening at least 1/2-inch wide. You can also use a round tip. Place a sheet of wax paper on a cookie sheet. Pipe lengths of dough about 4 to 6 inches long onto the cookie sheet and place in the freezer while you heat up the oil. Heat 1 to 2 inches of oil to 375 F. When the churros feel firm, carefully pick them up off the cookie sheet with a spatula and drop them into the oil. Working in batches, fry the churros for about 2 minutes on each side, until they are golden brown. Cool and drain them on a plate lined with paper towels. Mix 1/2 cup sugar and the cinnamon together, and place the mixture on a plate or in a pan. Roll the churros in the cinnamon sugar while they are still warm. To fill the churros, fit a pastry bag with a round (#4) metal icing tip. The tip should be small enough to poke into the end of the doughnut. Fill the pastry bag with your filling of choice. Poke a skewer through the doughnut lengthwise and pipe the filling into the hole. Serve warm. Experienced churros makers often skip piping the churros onto the cookie sheet. They will simply pipe them directly into the hot oil.

Guava Pastry aka Pastelitos de Guayaba- Transport yourself to the tropics with this quick and easy guava, cream cheese and puff pastry. You’ll be glad you did! It’s a heavenly treat.

I have always stayed clear from anything stuffed with cream cheese at the bakery. Would rather have it warm and fresh from my oven. But when I discovered this puff pastry at Porto s bakery (a Cuban style Bakery), all bets were off, am a tropical girl it was pretty hard to resist.Guava pastry’

They are addictive!!! Definitely not one for the diet but so worth the extra calories, you really won’t be disappointed with these!

And little did I know when I first tried these guava pastry, years ago that they are so simple to whip up. All you need is a handful of ingredients and you are good to go.

The only ingredient on the list, which might seem daunting to most people, who are not from the tropics, is guava paste a paste made from guava pulp (a tropical fruit) and often sugar. Super Super popular in Caribbean and Spanish cuisine.

Aaaand enjoyed fresh in West African Countries. Rest assured, if you live in the city this exotic ingredient is easier to get than you think. Just check any Hispanic or International Market. And you are going to see a variety of them.

Because it is close to Valentine’s day , I stuffed them with chocolate too. My son’s favorite! He doesn’t like cheese – only in Pizza. You can do the same and even shape them in to cute little hearts.

I always have store-bought puff pastry in my fridge – it’s great for entertaining; you do not even have to roll them out. It’s roll out already. All you need to do is remove from the freezer about 45 minutes before using. They are always available at most supermarkets, year round. And when they are on sale I stock up, just incase.

After making these you can freeze them for about a month, remove and bake. You might have to add an additional 5 minutes or more.

Enjoy!!!

Condensed Milk Cake-Quick, Tender and easy Cake that will impress at the dinner table or a party without you slaving in the kitchen.

Do you have a can of condensed milk in the pantry? Then turn it into something delectable like this cake here.

Condensed milk cake is definitely one of those desserts and requires minimal ingredients and preparation.

I don’t know about you but I look forward to sweets at the end of a meal. They have a magical way of balancing out the taste buds so we can reach ultimate satisfaction.

This condensed milk is similar to pound cake but has a lot more to offer. It is light and moist making every bite better than the last with a fabulous taste.

Although sweetened with quite a can of condensed milk, you will be pleasantly surprised by the level of sweetness. The cake isn’t overly sweet making it all the easier to indulge in 2 or 3 slices- paired with strawberries and whipped cream and it’s heavenly.

Every bite has great texture and your taste buds are soon hit with this rich, milky flavor and then you are ready to experience the deliciousness all over again. Guess what? You can have it for breakfast too! Or serve with some tea.

Unfortunately, many think using condensed milk in desserts will overwhelm it. Au contraire condensed milk enhances.

Try this cake for yourself. It will not disappoint.

Enjoy!

Ingredients

for 8 servings

Crust

¾ cup rolled oats (75 g)
6 tablespoons unsalted butter, 3/4 stick
¾ cup all-purpose flour (95 g)
½ teaspoon kosher salt
3 tablespoons water

Apple Tart

2 ½ lb honeycrisp apple, peeled, cored, and thinly sliced (4 apples) (1 kg)
½ lemon, juiced
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup unsweetened applesauce (260 g)
1 tablespoon unsalted butter, melted
1 tablespoon apricot jam, optional

Preparation

Make the crust: In a food processor, blend the oats into a coarse powder.
Add the butter to a medium saucepan over medium heat and cook until nutty brown in color, 5-6 minutes. Once the butter has browned, add the ground oats, flour, salt, and water, and mix to combine. Let cool for 5 minutes.
Transfer the crust mixture to a 9-inch (20 cm) tart pan, spreading evenly across the bottom and up the sides. Chill for 30 minutes.
Preheat the oven to 375˚F (190˚C).
Make the filling: Place the apples in a large microwave-safe bowl and squeeze the lemon juice over, then toss to coat. Microwave for 4 minutes. Cover with a plate and let steam for 5 minutes.
Season the apples with the cinnamon and nutmeg, and toss to coat.
Spread the applesauce over the bottom of the crust.
Starting from the outside and working inward, arrange the apples in the pan in a circular pattern with the curved side up. Begin with the larger slices, overlapping slightly, and continue until the entire crust is filled. Brush the apples with the melted butter.
Bake for 1 hour, checking occasionally. If the edges are browning too quickly, cover gently with foil to prevent further browning as the tart cooks through.
If using, microwave the apricot jam for 20-30 seconds to melt. Use a pastry brush to paint the apricot jam over the warm tart for a nice, shiny finish.
Let the tart cool to room temperature before slicing and serving.
Enjoy!

Great news: You don’t have to travel to Chicago to eat doughy, cheesy deep dish pizza because now, you can make it right in your kitchen. The most time-consuming part of this recipe is making the dough, but you can prepare it up to a month in advance and freeze it for later. Bake the dough in a deep dish pan covered with homemade tomato sauce, sausage, and cheese until it's golden-brown and bubbling.
Ingredients

for 8 servings

½ lb italian sausage (225 g)
10 slices mozzarella cheese
freshly grated parmesan cheese

Dough

1 ¼ cups water, warm (300 mL)
2 ¼ teaspoons active dry yeast
2 teaspoons sugar
3 ¼ cups flour (405 g)
¾ cup cornmeal (105 g)
2 teaspoons salt
2 tablespoons butter, melted
1 tablespoon olive oil

Sauce

2 tablespoons butter
1 onion, diced
1 teaspoon salt
1 teaspoon crushed red pepper
1 teaspoon dried oregano
2 cloves garlic, chopped
1 teaspoon sugar
30 oz crushed tomato with basil, 1 can (795 g)

Preparation

For the pizza sauce, melt the butter in a small saucepan and add the onion, salt, red pepper flakes, and oregano, and sauté until golden brown.
Add the garlic, sugar, and crushed tomatoes, and simmer for roughly 20 minutes or until sauce thickens.
For the dough, combine the active dry yeast, sugar, and warm water together and let sit for one minute.
In a large mixing bowl, combine the flour, cornmeal, and salt.
Add the yeast mixture and butter into the dry ingredients and stir until dough forms.
Bring dough to floured surface and knead until dough forms into a ball.
Move dough to large bowl drizzled with olive oil. Coat dough in oil and cover. Let rest for 1 hour.
Remove dough and bring onto floured surface.
Cut dough in half and begin working dough out, ensuring that it is at least 2 inches (5 cm) wider than your deep dish pan.
Double wrap the remaining dough with plastic wrap and place in a resealable freezer bag. Freeze for up to a month.
Preheat your oven to 425°F (215°C).
Bring your dough into your oiled and floured deep dish pan.
Using your hands press dough into sides of your dish making it as even as possible.
Lay slices of mozzarella across the dough, covering the entire bottom.
Add pieces of uncased italian sausage on top of the mozzarella and top with tomato sauce.
Bake for 20-25 minutes or until crust starts to lightly brown and the cheese is melted.
Garnish with parmesan, cut and serve.
Enjoy!

Cooking for a crowd and need the perfect appetizer? Try making these shrimp and veggie-stuffed lumpia, or, as they’re referred to in the Philippines, lumpia togue-- togue meaning bean sprout. Your guests will love the crisp wrappers and flavor-packed filling, and you will love how quickly a batch can be whipped up. You can also make these ahead of time, freeze, and fry a few days later!
Ingredients

for 16 lumpias

Sweet Chili Sauce

½ cup water, plus 1 tablespoon, divided (120 mL)
3 cloves garlic, minced
2 large fresno chiles, minced
¼ cup sugar (50 g)
⅓ cup rice vinegar (80 mL)
2 teaspoons kosher salt
1 tablespoon cornstarch

Lumpia

2 large carrots, peeled
½ lb green beans, trimmed (225 g)
1 tablespoon vegetable oil
1 small yellow onion, diced
3 cloves garlic, minced
1 teaspoon fresh ginger
1 lb shrimp, peeled, deveined and finely chopped (455 g)
1 tablespoon fish sauce
1 teaspoon kosher salt
1 teaspoon pepper
1 tablespoon rice vinegar
2 cups bean sprout (200 g)
16 lumpia wrappers
egg wash, for brushing
canola oil, for frying

Preparation

Make the sweet chili sauce: In a small pot over medium heat, mix together ½ cup (120 ml) of water, the garlic, Fresno chilies, sugar, rice vinegar, and salt. Bring to a boil, then reduce the heat to low and simmer for 2 minutes.
In a small bowl, whisk together the cornstarch and remaining tablespoon of water.
Whisk the cornstarch slurry into the sauce until fully incorporated. Continue to simmer for 1 minute, or until the mixture has thickened. Remove from the heat and let cool.
Make the lumpia: Julienne the carrots. Cut the green beans on the diagonal.
In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and cook for 3 minutes or until slightly tender.
Add the garlic and ginger, and continue cooking for 2 minutes more, until fragrant.
Add the carrots and green beans, and toss to combine. Add the shrimp, fish sauce, salt, pepper, and rice vinegar, and cook for 2 minutes or until shrimp is pink.
Add the bean sprouts, toss to incorporate, and remove the pan from the heat.
Lay out a lumpia wrapper in a diamond shape and spoon 2 tablespoons of filling onto the bottom of the wrapper, leaving about 1½ inches (4 cm) of space from the bottom point.
Fold the bottom point over the filling, then fold in the edges to create an envelope shape. Roll the wrapper toward the top point. Brush the top point with egg wash and finish the roll to seal the end. Repeat with the remaining wrappers and filling.
In a large, deep skillet, heat 1 inch (2.5 cm) of canola oil to 300°F (150°C).
Carefully add 4-5 lumpia at a time to the hot oil. Fry on each side for 1-2 minutes, or until golden brown. Note: If the lumpia are cooking too quickly or burning, reduce the heat. Remove the lumpia from the oil and drain on a wire rack or paper towels.
Garnish with cilantro and serve with the sweet chili sauce.
Enjoy!

Ingredients

for 6 servings

1 medium eggplant
½ teaspoon kosher salt, plus more to taste
¼ cup olive oil, divided (60 mL)
3 cloves garlic, smashed
56 oz whole peeled tomato, drained and roughly chopped, juices reserved (1.75 kg)
½ teaspoon red pepper flakes
1 lb whole wheat spaghetti (455 g)
½ cup ricotta salata, crumbled (125 g)
1 bunch fresh basil, thinly sliced

Preparation

Trim the ends of the eggplant, then slice into ½-inch (1 ¼ cm) thick rounds. Lay the eggplant rounds on a paper towel and season generously on both sides with salt. Let rest for 10 minutes to draw out excess moisture. After 10 minutes, pat the eggplant rounds with a paper towel to remove the moisture.
Heat a griddle pan over medium-high heat and grease with 2 tablespoons of the olive oil, or your oil of choice. Grill the eggplant for about 2 minutes on each side, or until grill marks are formed. Set aside to cool, then cut into bite-size pieces.
Heat the remaining 2 tablespoons of olive oil in a large pan over medium heat. When the oil is hot, add the smashed garlic and cook until fragrant and lightly browned but not burnt, flipping as needed. Remove the garlic from the oil and set aside to cool, then mince.
To the garlic oil, add the chopped tomatoes. Cook for 5-10 minutes, or until caramelized. Add the reserved tomato juice and simmer until reduced to a sauce-like consistency, 5-8 minutes.
Add ½ teaspoon salt, the red pepper flakes, and the minced fried garlic. Stir well, reduce the heat to low, and simmer while you make the pasta.
In a large pot of boiling water, cook the pasta according to the package instructions. Drain and return to the pot.
Pour the tomato sauce over the hot pasta. Add the eggplant, ricotta salata, and fresh basil. Toss until well combined.
Serve immediately.

Looking to create a dessert table for a party? It can be easy and fun to create the perfect table full of sweet treats for your guests. Here are my tips and tricks.

These photos are from my daughter, Juliette’s, first birthday party. Note: I am definitely not a party planner or a professional baker. I’m just a mama that wanted to make my little girl’s birthday party extra special. I was pleasantly surprised at how fun and affordable it is to create a dessert table. You can do it too!

Here’s how I did it:

DESSERT MENU:
Fresh Strawberry Layer Cake
Vanilla Smash Cake (for Juliette)
Raspberry Brownie Trifles
Chocolate Peanut Butter Brownie Trifles
Oatmeal Cream Pies
Chocolate Dipped Strawberries

1) Plan, plan, plan! How many guests are you hosting? How many desserts would you like to serve? Do you need to accommodate anyone with food allergies? I served 5 desserts to about 25 guests, and nearly everything was eaten!

2) Make as many items as you can in advance.

Most cake layers (unfrosted) can be tightly wrapped and frozen days in advance. Defrost in the fridge, then frost the cake the day of your event.
Balls of cookie dough freeze beautifully. Make cookie dough days or weeks in advance, then bake them the day of your event – freshly baked cookies with minimal effort! I did this for the oatmeal cream pies.
Pound cake also freezes really well, and it’s great in trifles. No one will know it’s not freshly baked!

3) Use a mixture of homemade and store bought items. You don’t have to make all the desserts yourself. Pick and choose the items you want to make, and then buy the rest.

4) Take one thing (I used boxed brownies) and make two desserts from it. I prepared a boxed brownie mix the day before, then chopped the brownies and layered them into two different flavors of trifles the day of the party (pictured below). I used a gluten-free brownie mix because we had several gluten-free guests. Even the guests who eat gluten loved these trifles!

5) Apothecary jars, mason jars, and candy dishes all look great on a dessert table. Fill them with candy and provide a scoop for guests to help themselves.

6) Table decor: fabric is typically less expensive than buying tablecloths. We used a large piece of burlap and tulle for our table covering. I also suggest using items from around your house to decorate. I used a banner, floral print, frames, and candles that we already had in our house.

7) To make your display more visually pleasing, display desserts on dishes, platters, and stands of varied heights. Additionally, you can raise platters or stands even higher by placing them on a stack of books hidden under the fabric or tablecloth.

Most importantly – HAVE FUN! Your guests will love the assortment of sweet treats, and you’ll enjoy watching your dessert table bring people together. Happy celebrating!

Makes one gallon.

It may be a good idea to put on an airlock for a while to make sure the plums are done fermenting before final bottling and aging.
Ingredients

3 1/2 pounds ripe plums
4 pounds granulated sugar
1 pack yeast
1 gallon boiling water

Instructions

Wash plums and pour on water.Stir and mash with wooden spoon.
Leave for ten days.
Remove mold carefully. Strain off into another bowl and add sugar, yeast and stir.
Cover and stir daily for three days.
When ready to bottle after three days, add Campden tablet before bottling to kill off stray bacteria Use demijohn or gallon jug to bottle.
Ready in six months; better after nine.

Ingredients

for 6 servings

24 oz sirloin steak, or top loin steak (680 g)
kosher salt
fresh ground black pepper
¼ cup vegetable oil, plus 2 tablespoons, divided (60 mL)
2 tablespoons unsalted butter
½ large yellow onion, chopped
2 cups button mushroom, chopped (150 g)
1 sourdough bread, large
6 slices cheddar cheese
1 cup baby spinach (40 g)
6 strips bacon, cooked
6 slices provolone cheese, or swiss cheese

Preparation

Season each steak generously with salt and pepper, making sure to rub the salt and pepper into the sides of the steak.
In a cast iron skillet, heat the vegetable over high heat until smoking hot. Lay the steaks in the pan and cook for about 2 minutes. Flip the steaks, then add the butter, swirling it around the pan. Using a large spoon, scoop the melted butter over the tops of the steak, basting them continuously. Cook for about 2 minutes to get medium rare. (Check the steaks with an instant read thermometer if you have one; you want an internal temperature of about 135˚F.) Set the steaks aside on a cutting board to rest.
Wipe out the skillet and heat the remaining 2 tablespoons of oil over medium-high heat. Add the onion and mushrooms and sauté, stirring constantly, until caramelized, about 20 minutes.
Using a serrated knife, slice the top off the bread and scoop out the insides to create a bread bowl. Nestle one steak into the bottom of the bread bowl. Layer the cheddar cheese evenly on top. Add the caramelized onions and mushrooms and use a spoon to spread them evenly over the cheese. Top with the spinach, then the bacon, then the Swiss cheese. Finally, put the second steak on top, tucking it under the lip of the bread bowl. Cover with the bread lid and wrap the entire loaf in foil.
Place the wrapped sandwich in the fridge and put a cutting board on top of it. Stack books on the cutting board to compress the sandwich. Chill in the fridge for at least 5 hours.
Preheat the oven to 250˚F. Remove the foil from the sandwich and place it on a baking sheet. Bake for 20 minutes, until the bread is slightly crisp.
Enjoy!

Ingredients

for 8 servings

3 tablespoons olive oil
1 cup carrot, grated (110 g)
1 medium yellow onion, diced
2 lb ground beef (905 g)
1 ½ teaspoons dried oregano
½ teaspoon red pepper flakes
black pepper, to taste
4 cloves garlic, minced
½ cup dry red wine (120 mL)
28 oz crushed tomato, 1 can (795 g)
½ cup fresh basil, chopped (20 g)
salt, to taste
1 large head savoy cabbage, eaves separated and stems trimmed
1 egg, beaten
2 cups whole milk ricotta cheese (500 g)

Preparation

Preheat the oven to 375°F (190°C).
Heat the olive oil in a large pan over medium heat. Add the carrot and onion, and cook until the vegetables have softened slightly, 8-10 minutes.
Add the beef and season with the oregano, red pepper flakes, and pepper. Use a wooden spoon to break the beef into smaller pieces, and cook until browned, about 10 minutes.
Add the garlic and cook until fragrant, 2-3 minutes.
Deglaze the pan with red wine, scraping up any browned bits from the bottom of pan.
Once the wine has reduced by half, stir in the crushed tomatoes. Cook until sauce has thickened, stirring frequently, about 10 minutes.
Stir in the basil, then remove the sauce from the heat and let cool.
Bring a large pot of salted water to a boil. Working in batches, add the cabbage leaves, using tongs to submerge them in the water. Cook until the leaves have softened and are flexible, 1-2 minutes. Drain well and pat dry with a paper towels.
Stir the egg into the cooled meat sauce.
Place the largest cabbage leaf on the bottom of a 9-inch (23-cm) round baking dish. Line the exposed sides and bottom of the pan with more cabbage leaves.
Spoon in ¼ of the meat sauce, spreading evenly. Dollop ¼ of the ricotta on top of the sauce. Cover with cabbage leaves. Repeat with the remaining sauce, ricotta, and cabbage to make 3 more layers.
Fold any overhanging cabbage leaves toward the center of the pan.
Bake on the middle rack of the oven for 1 hour, until lightly browned on top. Let cool for 20 minutes.
To serve, place a serving plate over the baking dish and invert the chou farci onto the plate. Remove the pan, then slice into wedges and serve.
Enjoy!
